Chocolate SoufflÉ
(5-6 SoufflÉs)

Ingredients for Pastry Cream:
1\2 quart milk
1 vanilla stick
1\2 lb. sugar
6 egg yolks
1\2 lb pastry cream powder

Bring milk and vanilla to boil.
In another bowl, mix sugar and yolks until foamy. Add pastry cream powder. Slowly pour boiling milk into bowl, mix quickly. Let cool.

Ingredients for Soufflés:
2 ounces cocoa powderbr>
6 egg whites
1\4 lb sugar

Whip egg whites until firm, add sugar.
Add cocoa powder to pastry cream, delicately blend with egg whites.
Coat 5 individual soufflé molds all around with melted butter and fine sugar using a brush, place batter inside; 3\4 full.

Place in 375 degree oven for 15 minutes. Sprinkle confectionary sugar on top before serving. Chocolate sauce can be served on the side. A long needle can be inserted in the middle of the soufflé. If very hot to the touch, proceed to serve.

Ingredients for Chocolate Sauce:
5 oz sugar
3 oz cocoa powder
1\2 lb water
1\2 lb heavy cream
3 oz corn syrup
4 oz dark chocolate

Mix all ingredients but the dark chocolate and bring to a boil while stirring. Take off the flames, add the dark chocolate, stir and serve.
