3/4 cup sifted flour
1 teaspoon salt
2 whole eggs
3 egg whites
1 1/4 cup peanut oil
1 cup beer
6 apples
lemon juice
Cognac or Calvados
confectioners' sugar
Batter
Place flour in a mixing bowl. Make a well in the center
and add salt, whole eggs and peanut oil. Whisk the eggs and oil together,
incorporate a little of the flour. Add beer and stirring well, gradually
incorporate the rest of the flour. Allow to stand for approximately 1
hour. A few minutes before using the batter, stiffly beat egg whites and
fold into the batter using a wooden spoon or rubber spatula.
Apples
Cone apples with an apple corer, peel and cut into rounds about 1/8"
thick. Sprinkle with lemon juice and macerate for 30 minutes in Cognac
or Calvados. Drain apples thoroughly, dip in batter and deep-fry in hot
oil. Remove the fritters and drain. Dust with confectioners' sugar.
