Pâte á choux (Puff Pastry)
Serves 8

Pâte á choux
1 cup water
Pinch of salt
7 Tbs. butter
1 cup flour
6 eggs

Chocolate sauce (serves 8)
6 oz. dark chocolate
4 oz. water
1 oz. butter
6 Tbs. cream
3 Tbs. sugar
½ Tbs. of vanilla or 1 vanilla stick

Pâte á choux preparation:
Pre-heat oven to 350 degrees. In a sauce pan put water, butter and salt. Bring to a boil. Add flour and mix together using a wooden spatula. Put mixture in a bowl, add eggs one at a time to get a smooth batter. Insert batter in a pastry bag and dress on parchment paper. Bake about 20 minutes or until golden.

For “Cheese Cougères” add shredded parmesan as an hors d’ oeuvre or as an appetizer add mushroom purée or béchamel or make your own creation!

For “Chocolate Profiteroles” add vanilla ice cream and top with hot chocolate sauce and serve as dessert.
