Smoked Salmon Tartar
With Soy-Ginger Reduction
(Serves 4)

1 lb. Smoked salmon
2 tsp. Sesame Oil
Salt & Pepper

Soy-Ginger Reduction:
¼ cup Light Soy Sauce
¼ cup Olive Oil
2 tsp. Honey
1Tsp. Garlic
2 Tsp. Rice vinegar
Small piece of ginger
Pinch of pepper
Micro Salad mix

Bring together in medium size pot, soy sauce, honey, garlic, rice vinegar, ginger and pepper. Cook on low heat to infuse and reduce. Let cool down. Then whisk in olive oil.

Bring finely sliced salmon to taste with sesame oil, salt and pepper. Dress the center of the plate. Sprinkle reduction around salmon. Garnish with micro salad mix.
